Ingredients

For the Salad

Instructions

Preparation

  • In a bowl, whisk together the balsamic vinegar, olive oil, brown sugar, minced garlic, dried basil, and salt until well combined. This will serve as both a marinade for the chicken and a dressing for the salad.
  • Place the chicken thighs in a shallow dish and coat them well with four tablespoons of the marinade. Remember to keep the remaining marinade aside for the dressing.

Cooking the Chicken

  • Heat 1 teaspoon of oil in a grill pan over medium-high heat. Once hot, add the marinated chicken thighs and cook them until golden and cooked through, about 6–8 minutes per side.
  • Once cooked, remove the chicken from the pan and let it rest for a few minutes before slicing it into strips.

Assembling the Salad

  • To assemble the salad, arrange the Roma lettuce, sliced avocado, cherry tomatoes, mozzarella balls, and sliced chicken on a plate.
  • Drizzle with the reserved balsamic dressing and sprinkle the fresh basil on top. Season with salt and pepper to preference.
  • Serve fresh and enjoy this vibrant salad!

Notes

For added flavor depth, marinate the chicken for at least 30 minutes or overnight if possible. Experiment with different greens or add nuts like walnuts for extra crunch.
