Instructions

Preparation

  • Preheat your oven to 190°C (375°F).
  • Peel and finely dice the sweet potato into small cubes.
  • Toss the diced sweet potato with 1 tablespoon of olive oil and a pinch of sea salt.
  • Spread sweet potato pieces on a baking sheet and roast for about 20 minutes.

Cheese Mixture

  • In a mixing bowl, combine feta cheese, soft goat cheese, Greek yogurt, 1 tablespoon olive oil, lemon zest, garlic powder, and cracked black pepper.
  • Blend the mixture until smooth using a hand blender or food processor.
  • Taste and adjust seasoning as desired.

Bake Cheese

  • Pour the cheese mixture into a small baking dish and spread it evenly.
  • Bake for approximately 15–18 minutes or until golden and puffed.

Crisp Sage

  • In a small skillet, heat 1/2 tablespoon of olive oil over medium heat.
  • Add fresh sage leaves and fry until crisp, about 20 seconds.
  • Drain on paper towels.

Serve

  • Top the warm cheese dip with roasted sweet potato pieces and crispy sage leaves.
  • Drizzle with extra olive oil and serve immediately.

Notes

Ensure cheeses are at room temperature for easier blending. Don't rush the roasting of sweet potatoes for maximum flavor.
