Ingredients

Quesadilla Filling

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Microwave the mushrooms in a bowl for 2 1/2 to 3 minutes to soften. Drain well to remove excess moisture.
  • Brush one side of each tortilla lightly with olive oil (optional).
  • Place the tortillas, oiled-side down, on a baking sheet.

Filling Quesadillas

  • Sprinkle half of the mozzarella and cheddar evenly over one side of each tortilla.
  • Layer the spinach and mushrooms evenly over the cheese.
  • Add the remaining cheese on top of the veggies.
  • Fold the tortillas in half over the fillings.

Baking

  • Bake for 6 minutes, then flip carefully and bake for another 6 to 7 minutes until crispy and golden brown.
