Instructions

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Place the salmon fillets on the baking sheet. Drizzle with olive oil and season with salt, pepper, garlic powder, and paprika. Bake for 12-15 minutes, or until the salmon flakes easily with a fork.

Make the Salsa

  • In a medium bowl, combine cranberries, mango (or apple), red onion, cilantro, lime juice, honey, salt, and pepper. Stir well and let it sit for about 10 minutes.

Toast the Pecans

  • In a dry skillet over medium heat, toast the chopped pecans for 2-3 minutes until fragrant. Set aside.

Assembly

  • Remove the salmon from the oven and transfer to serving plates. Spoon the cranberry salsa over each fillet, then sprinkle with toasted pecans and extra cilantro for garnish.
  • Serve warm with your favorite sides, such as steamed vegetables or quinoa.

Notes

For enhanced flavor, consider using fresh cranberries and adding a pinch of chili powder for extra kick. Experiment with seasonal fruits in the salsa, such as peaches or pears. Always let the salsa sit for at least 10 minutes before serving.
