Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper.
  • In a large bowl, combine the ground chicken, ricotta cheese, grated Parmesan, chopped spinach, breadcrumbs, egg, minced garlic, salt, pepper, oregano, and onion powder. Mix until just combined.
  • Scoop the mixture into 1.5-inch balls and arrange them on the prepared baking sheet.

Cooking

  • Bake for 20–22 minutes or until the meatballs are golden brown and cooked through, with an internal temperature of 165°F (74°C).
  • In the last few minutes of baking, warm your marinara sauce in a skillet. Once the meatballs are done, toss them in the sauce until fully coated.
  • Finish with an extra sprinkle of Parmesan cheese before serving.

Notes

Don’t overmix to avoid tough meatballs; experiment with herbs and add spice according to taste. Use a cookie scoop for even meatballs.
