Ingredients

Casserole Base

  • 1 pound lean ground beef Juicy and savory, serving as the hearty base.
  • 8 medium flour tortillas Soft and pliable for layering.

  • 1 cup salsa Choose your favorite for flavor.

Cheese Layer

  • 2 cups shredded cheddar cheese Melty and indulgent.

Seasoning and Aromatics

Instructions

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a skillet over medium heat, brown the ground beef until fully cooked, breaking it up with a spoon.
  • Add the chopped onion and minced garlic to the skillet. Cook until fragrant, about 2-3 minutes.
  • Stir in the taco seasoning along with 1/4 cup of water and let simmer until thickened, about 5 minutes.

Assembly

  • Spread a thin layer of salsa on the bottom of a greased 9x13-inch casserole dish.
  • Place two flour tortillas over the salsa.
  • Spread half the refried beans over the tortillas.
  • Add half of the beef mixture, followed by a sprinkle of both cheeses.
  • Repeat the layering with more tortillas, remaining refried beans, beef, and cheese.

Baking

  • Finish with a final layer of tortillas topped with the last of the salsa and remaining cheese. Cover with aluminum foil.
  • Bake for 20 minutes, then remove the foil and bake for another 10 minutes until golden and bubbly.
  • Let cool slightly before garnishing with sour cream and chopped cilantro.
  • Serve warm and enjoy!

Notes

For a lighter version, consider using ground turkey or shredded chicken. You can also customize the fillings or add different types of cheese for variety.
