Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Place the trimmed asparagus onto a baking sheet. Drizzle with olive oil and season generously with salt and black pepper. Toss to ensure each stalk is coated evenly.
  • Roast the asparagus in the preheated oven for about 10 minutes or until tender and slightly charred. Remove from the oven and let it cool slightly.
  • In a medium bowl, combine the halved cherry or grape tomatoes with a drizzle of olive oil and a pinch of salt and pepper. Toss to coat the tomatoes evenly.

Assembly

  • On a serving plate, arrange the roasted asparagus and tomato mixture. Tear the burrata cheese into pieces and scatter over the top.
  • Sprinkle toasted pine nuts and freshly torn basil leaves over the salad. Drizzle with balsamic vinegar and any remaining olive oil.

Notes

For enhanced flavor, consider marinating the asparagus in olive oil, salt, and pepper for 30 minutes before roasting. To add crunch, consider crispy prosciutto or radishes. If short on time, grill the asparagus instead.
