Instructions

Preparation

  • Heat olive oil in a large skillet over medium-high heat.
  • Season the salmon fillets with salt, pepper, and lemon zest.
  • Cook the asparagus in the skillet for about 4-5 minutes until just tender, then set aside.

Cooking

  • Add unsalted butter to the skillet and let it melt.
  • Place the salmon in the skillet, skin-side down, and cook for 3-4 minutes until golden.
  • Flip the salmon and cook for an additional 3-4 minutes until flaky.
  • Add minced garlic and lemon juice in the last minute of cooking, swirling the sauce.
  • Return the asparagus to the skillet and toss in the garlic butter sauce.
  • Plate the salmon with asparagus and top with chopped parsley if desired.

Notes

Use fresh salmon for best results. Get the skillet hot before adding salmon to achieve a lovely crust. Customize with other herbs and add more veggies for variation.
